Veget8 vinegar is made in small batches at the Minus 8 vineyard. It starts with Cabernet Franc grapes which are made into ice wine and then vinegar. This is combined with vinegar made from locally grown Roma tomatoes.
Veget8’s light, herbal flavours work beautifully in dressings and marinades. You can use it as a finishing vinegar or in homemade condiments. It gives ketchup and BBQ sauce a satisfying tang.
This unique vinegar is perfect for tomato-based dishes. Swirl it over tomato soup or a tomato and red onion salad. A small spoonful lifts the flavour of pasta sauces and gazpacho.

Minus 8 is a family-owned vineyard in Niagara, Canada. The name refers to the temperature at which the grapes are harvested. They are pressed while still frozen, resulting in a sweet juice known as ice wine. This is then fermented to produce vinegar.
