Mill & Mortar Organic Preserved Lemon Granules, 40g
Preserved lemon granules add citrusy umami to savoury dishes. You can sprinkle them over dips or add them to marinades and salad dressings. The flavour is bright and intense, lending welcome acidity to slow cooked dishes.
Preserved lemons are whole lemons preserved in brine. The salt removes their bitterness and intensifies the sweet lemon flavour. They are popular in North African cuisine, adding tang to lentil soups and tagines.
Use the granules in the same way you would use chopped preserved lemons. They’re wonderful in marinades with garlic, olive oil and fresh herbs. Rub the citrusy mix into spatchcocked chickens or firm fleshed fish.
Scatter preserved lemon granules over grilled prawns and roast potatoes. They’re a vibrant addition to summer salads with herbs and crispy chickpeas. Try adding the granules to yoghurt-based dressings and citrus vinaigrettes.
Mill & Mortar’s salted lemons are gently dried and granulated. The drying process preserves their taste and colour, whilst also prolonging their shelf life.
Store in an airtight container in a dark, dry place.
